More Than Marbling

The pursuit of balance behind LEGACY Wagyu

As a cattleman, it’s a pretty special opportunity to embark on developing a new herd with a really clear objective: to produce balanced Wagyu cattle that excel in marbling performance.

This was ACC’s mission in building the Wagyu herd that now underpins the LEGACY Wagyu brand, launching in 2026 as a luxury beef brand available in Australia, and around the world.

Ryan Carter is the cattleman behind the LEGACY Wagyu herd, and for him, delivering an exceptional eating experience begins long before a chef places a steak on the grill.

"It's about making thousands of small decisions over many years," Ryan says. "Every breeding decision, every mating and every management practice is aimed at producing cattle that consistently deliver outstanding beef."

Building the foundations

That journey began in 2019 with the acquisition of the highly respected Shadai and Wendron fullblood Wagyu herds. Rather than starting from scratch, the herd was built on generations of proven performance, backed by more than two decades of detailed data.

"It gave us confidence that these bloodlines could consistently produce the traits we value most, particularly marbling, eating quality and overall carcass performance."

From there, Ryan and his team carefully selected the most influential females from the combined herds. The cows chosen as foundation donors weren't simply impressive animals in their own right; they had a proven track record of producing exceptional offspring.

"We wanted females that had repeatedly demonstrated their ability to pass desirable traits to the next generation," Ryan explains. "That's where consistency starts."

Growing the herd while preserving quality required a disciplined approach. Over the past six years, more than 11,000 embryos have been implanted, allowing the replication of elite genetics while maintaining a relentless focus on performance and quality.

Pursuing Balance

The goal, however, has never been to pursue marbling alone.

"Marbling is important, but we're breeding balanced cattle," Ryan says. "We're looking at growth, fertility, efficiency and the traits that contribute to the overall eating experience, including flavour, tenderness, mouthfeel and visual appeal."

That balanced approach extends to every mating decision. By analysing pedigree information, genomic data, historical performance and carcass results, each joining is carefully planned to complement the strengths of both sire and dam.

Consistency through generations

"There is always a purpose behind each mating. We're constantly refining the herd and building on previous generations."

But great Wagyu isn't created through genetics alone.

Ryan explains the foundations of premium beef are established from the earliest stages of an animal's life. LEGACY Wagyu cattle are raised across the grazing country of western Queensland's Warrego and Maranoa regions, where calves remain with their mothers during the crucial first months of development.

A central philosophy of the program is maintaining a consistent plane of nutrition throughout an animal's life.

"We work hard to avoid nutritional interruptions or growth checks," Ryan says. "From pregnancy through to weaning and beyond, consistency is incredibly important if you're going to allow cattle to express their genetic potential."

Quality pastures, carefully managed supplementation programs and a focus on animal wellbeing all play a role in maintaining that steady development. The result is cattle that grow consistently and predictably throughout the supply chain.

Equally important is traceability.

Every animal is individually identified and tracked from birth, creating a detailed lifetime record that includes pedigree, health treatments, performance data and processing outcomes. DNA parentage verification and genomic testing further strengthen the integrity of the program and provide greater confidence in every breeding decision.

"It's all about having confidence in the data," Ryan explains. "The more information we have, the better decisions we can make."

Innovation at heart

Innovation has become one of the defining features of the LEGACY Wagyu breeding program. Advanced reproductive technologies, genomic testing and data-driven selection tools allow Ryan's team to identify elite animals earlier and accelerate genetic improvement across the herd.

Combined with more than 26 years of carcass performance records, that depth of information provides a powerful advantage.

"It allows us to make decisions with a much higher degree of confidence than ever before."

The same commitment to continuous improvement extends to sustainability. The program places increasing emphasis on breeding cattle that convert feed more efficiently, helping reduce resource requirements while maintaining the marbling, quality and consistency expected of premium Wagyu.

"Perhaps the most satisfying part is knowing the decisions we make today will influence future generations of cattle," he says.

"It's a continual pursuit of improvement. Every generation provides an opportunity to make the herd better than it was before."

And when all of those decisions come together, from decades of genetic selection and meticulous breeding plans through to nutrition, traceability and animal care, the result is what LEGACY Wagyu aims to represent: a premium beef experience built on patience, precision and an unwavering commitment to quality.

For Ryan, the reward comes from seeing years of planning ultimately reflected in the final product.

“My favourite way to enjoy our product is a striploin cooked simply, and sliced into thin strips to share with family and friends”.
